CHICKEN SOUP (salt only)
Chicken, cut into parts | ½ nos |
Cooking Oil | 2 tbs |
Cinnamon | 1 stick |
Cardamom seeds | 3 nos |
Star Anise | 1 pcs |
Shallot, thinly sliced | 3 nos |
Bombay Onion, thinly sliced | ½ nos |
Garlic, thinly sliced | 2 nos |
Carrot, cut into cube | 1 nos |
Potato, cut into cube | 2 nos |
Water | 500ml |
Salt | 2 tsp |
Sugar | ½ tsp |
Chinese Celery, chop | 2 stalks |
- Heat the oil in a saucepan. Add in cinnamon, cardamom and star anise fry until fragrant.
- Then add in shallot, onion and garlic, stir fry until fragrant.
- Add the chicken, water and stir, then cover the pot and simmer until half cooked.
- Then add in potato, carrot and cook until tender.
- Season with salt and sugar.
- Sprinkle with chinese celery.
- Ready to serve.
